I believe in romanticizing every meal by dressing up dishes with fancy garnishes. To me, this elevates the dining experience! Even if I’m eating at home, I feel like I’m all of a sudden celebrating a special occasion when the food presentation is on point.

Recipe deets:
1.) Prepare all of the ingredients and add them to a high speed blender.
2.) Mix for a couple minutes until you have an even, smooth consistency.
3.) It’s ready to eat without the garnishes, but feel free to add them if you please!
Zesty Green Gazpacho ingredients:
– 2 cups kale leaves
– 1 cup of chopped cucumber
– 3 celery stalks, chopped
– 1 small Granny Smith apple, chopped
– 1/4 red onion (chopped and rinsed under hot water in a colander for 30 seconds to mild out the intense flavor)
– 1 cup of coconut water
– 1 large garlic clove
– Juice and zest from 1 lime
– 1/2 cup of mint leaves
– 1 tbsp apple cider vinegar
– 1/2 tsp agave nectar
– 1/4 tsp Himalayan pink salt
– 1/4 cup @vermontcreamery creme fraiche
Garnishes (optional):
– Creme fraiche that is thinned with olive oil (stir together in a measuring cup with a spout so you can pour it in circular motion)
– Lavender buds
– Mint leaves
– Edible flowers, such as pansies
