To all the gardeners wondering what to make with their tomato harvests, listen up! You need to make this Smoked Tomato Soup ASAP. The flavor and smell of anything smoked is out of this world. I’d smoke all food if I could! I’ve made this recipe a few times now, and every time I take the first sip I’m blown away by the complex flavor.
10/10 recommend making this savory tomato soup. If you don’t have a smoker, just roast your tomatoes in the oven, and add a dash of liquid smoke or 1/4 tsp of smoked paprika to get a similar smoky flavor.

Ingredients to smoke in a 4” deep foil baking tray:
– 5 lbs of fresh tomatoes (I used 12 Roma, 2 heirloom, and 4 Kumato)
– 1 red bell pepper, chopped
– 5 garlic cloves
– 2 tbsp extra virgin olive oil
– Salt and pepper
Ingredients to sauté:
– 2 tbsp extra virgin olive oil
– 1 Vidalia (yellow) onion, chopped
– 1 sprig fresh thyme, or 1/4 tsp
– 3/4 tsp of cumin
– 1 pinch of baking soda
Ingredients to boil:
– 3 carrots, chopped
Ingredients for the topping:
– 1 tbsp green onion, diced
– 1 tbsp of goat cheese
Directions:
1.) Put the foil dish of ingredients to smoke in the smoker at the temp of 250-275 degrees Fahrenheit for 45 minutes, until they are soft. (The tray will capture all the liquids from the tomatoes and this will be used later on)
2.) While carrots are smoking, sauté the onion, thyme, cumin, and baking soda in a deep pot, and in a separate medium size pot boil carrots until they soften.
3) Once the carrots are soft and the smoking is done, add all ingredients to the deep pot that the onion was sautéed in, and use an immersion blender to get everything mixed together. Let simmer a few minutes.
4) When serving, top each bowl with a dollop of goat cheese and a sprinkle of green onion.
