I recently learned about an Italian cocktail called the Rossini. Have you heard of it? The classic version just calls for strawberry purée and Prosecco, but my upgraded version incorporates other flavors popular throughout Italy: elderflower and basil! This Elderflower Strawberry Basil Prosecco “Rossini” is so refreshing for summer and the herbal touch helps balance it out so it’s not overly sweet.

How I made this Italian Apertivo
Since COVID-19 hit, I’ve been trying to stock up on more frozen ingredients so I don’t have to go to the grocery store as often. I have a lot of frozen strawberries at the moment, which I usually add to smoothies. For this cocktail, I wanted to use ingredients I had on hand, so I went with frozen strawberries as opposed to fresh. Boy, am I glad I did! They kept my drink extra cool as I drank it outside on the balcony. I also added four ice cubes to my blender.
Next, I picked a handful of fresh basil from my garden because I have SO much of it. Don’t want that to go to waste!
I know not everyone has Elderflower simple syrup just sitting around, but I highly recommend stocking up on some. Whenever I add it to a recipe it completely transforms the drink and it smells like honeysuckles. Everyone likes the smell of honeysuckles, right?!
Finally, I added a mini bottle of Prosecco. I’m a fan of the small Prosecco bottles because they are more conducive to making smaller portioned cocktails, such as this, any day of the week.

I made this drink three times to make sure it was perfect before sharing here with you guys. I can’t imagine doing anything differently to this drink to make it any better than it already is. Hope you enjoy it!

Elderflower Strawberry Basil Prosecco “Rossini”
Ingredients
- glass rimming sugar (optional)
- 1 tbsp Elderflower syrup
- 1 ½ cups frozen strawberries
- ½ cup fresh basil
- 1 individual-sized bottle of Prosecco (187 ML or ¾ cups)
- 4 ice cubes (¼ cup)
Instructions
- (optional) Run a slice of thawed strawberry along the rim of a glass and dip your glass upside down into flavored sugar.
- Measure all the ingredients and add them to a blender.
- Turn on the blender until everything is well mixed and there are no chunks of ice.
- Garnish with a piece of basil.
