These comforting power waffles made from blueberries, lemon, coconut, and bananas are not only to DIE for, but they’re also guilt-free! I might break the internet if I wrote in detail all the reasons why I love this recipe, so instead, I’m going to try and keep this brief with a quick summary.
Four reasons why I love these comforting power waffles:
- They are oil-free
- Heart-healthy, yay!
- The recipe includes about 4 thawed frozen ripe bananas (1 cup)
- Does anyone else have a hard time eating bananas when they are fresh, so instead of throwing out a ripe banana, you put it in the freezer? I wanted this recipe to specifically use thawed frozen ripe bananas because they taste sweeter, and, of course, I wanted to purge my inventory of frozen bananas from my freezer.
- The recipe incorporates Kodiak Cakes’ ready-made mix
- Using Kodiak-Cakes’ mix means that you don’t have to measure out as many ingredients (like sugar, baking soda, flour, and baking powder), so you can throw the recipe together much quicker. Ain’t nobody got time for all that measuring!
- Not only is using Kodiak Cakes convenient, but their mix is also made with no preservatives, it’s free of GMOs and provides at least 18g of protein with every serving.
- The mix contains wheat, walnuts, soy, pistachios, peanuts, hazelnuts, eggs, cashews, almonds, milk, and brazil nuts.
- They taste gourmet
- I’ve never had crème fraîche on my waffles until I tried it with this recipe and I am kicking myself for not trying this sooner! Take my word for it, crème fraîche will take your waffle game to another level. I also topped this off with fresh blueberries and blueberry syrup. “WOW!” is all I have to say about how this tasted.

Comforting Power Waffles
Ingredients
Batter
- 2 tbsp plain greek yogurt
- 2 tbsp coconut flakes
- 1 tsp vanilla extract
- 1 cup thawed frozen ripe bananas, mashed (4 bananas)
- (available on Amazon or at Target if you don't see it at your local grocery store)
- 1 cup blueberries (I used frozen blueberries and just ran them under warm water so they'd thaw)
Toppings
- 1 tbsp Vermont Creamery Crème Fraîche (You might find this in the cheese section at a high-end grocery store)
- ½ cup blueberries
- ground cinnamon
Instructions
- Heat up your waffle maker (I turned mine on to medium heat)
- In a large bowl mix together your eggs with the dethawed mashed ripe bananas, greek yogurt, coconut flakes, vanilla, and lemon zest.
- Gently mix in the Kodiak Cake mix and blueberries.
- Spray your waffle iron with cooking spray.
- Pour a ladel-size scoop of your batter onto your waffle iron and cook at medium heat until the edges look browned and it’s a little crisp. (I had my batter on there for about 7 minutes)
- Spread creme fraiche on top and a small handful of blueberries, plus a sprinkle of cinnamon powder. Enjoy!
