Lean, Spaghetti Squash Carbonara… because the only thing better than a traditional Carbonara dish is a version that is better for your health! 💪🏼
I’m not into counting calories, but I do try to opt for lower calorie selections as long as I don’t have to sacrifice deliciousness, and the alternative options aren’t processed.
My version is made with lower calorie ingredients (ham & spaghetti squash). Usually carbonara is made with bacon, which has 241% more calories than ham; spaghetti has 5x more calories than spaghetti squash, yet it’s just as filling.

To make this Spaghetti Squash Carbonara, you’ll need:
– 1 spaghetti squash
– 4 cloves of garlic
– 4 oz ham, finely chopped (3/4cup)
– 1 tbsp truffle butter/truffle olive oil
– 2 eggs
– 3/4 cup shredded parmigiana cheese
– 2 cups kale
– ground black pepper
Directions:
1.) Gather/prep all the ingredients.
Rip up kale into small pieces, discarding the stems and set aside.
Finely chop the ham and place it in a large skillet along with pressed garlic, plus a tablespoon of truffle butter/olive oil. Hold off on cooking.
Cook the spaghetti squash. You could bake it if you’d like, but I cooked it in the microwave to save time. To do so, slice it in half lengthwise, scoop out the seeds, apply a drizzle of olive oil, then reapply the cut halves together so they’re touching and place it in a microwave safe container with a centimeter of water, then microwave for 10 minutes. The center should be soft when you pierce it with a fork. Scoop out the center of the spaghetti squash and set the strands of squash off to the side.
Whisk the two eggs in a small bowl with the cheese and your desired amount of black pepper.
2.) Heat up everything in the skillet over medium heat in this order:
– Ham, garlic, and truffle butter/olive oil for 1 minute until the garlic is fragrant.
– Stir in spaghetti squash
– Add kale and cover it for a minute, until it’s wilted.
– Turn off stovetop heat and slowly add the raw egg/cheese mixture to the top of the squash. The heat from the food will cook the egg as it gets stirred together.
