I bet if I were to ask you what was in this Refreshing Fizzy Probiotic Green Gazpacho, you’d never guess it includes Aqua Kefir, a fermented probiotic drink! Hear me out though… this recipe is really delicious and it smells SO good.
I made this recipe with GT’s Orange Peach Mango Aqua Kefir that I bought at Trader Joe’s on a whim. I didn’t realize at the time what Aqua Kefir was, but I figured I’d give it a try because I typically really like GT’s kombucha products. Turns out, Aqua Kefir is similar to kombucha because it supports digestion, however, it doesn’t have caffeine. GT’s Aqua Kefir is dairy-free and you may be able to find it in grocery stores next to the Kombucha.

Recipe Substitutions
If you can’t find GT’s Orange Peach Mango Aqua Kefir at your local grocery store, try substituting a kombucha that comes in one of these flavors:
- Mango
- Orange
- Peach
- Pineapple
- Ginger
- Hibiscus
- Cayenne
- Turmeric
Kombucha and Kefir drinks are naturally carbonated from fermentation. You’ll notice after mixing up all the ingredients in a blender, it will sound like it’s fizzing. The little bubbles help make this recipe seem extra refreshing. Enjoy this as an appetizer or have a bowl for lunch if you need an afternoon pick-me-up. Hope you like it!
Refreshing Fizzy Green Gazpacho
Ingredients
Gazpacho Ingredients
- 1 cup chopped celery (3 stalks)
- 1 jalapeño pepper, deseeded
- 2 small Granny Smith apples
- 1 cup organic kale leaves
- 1 tsp chopped ginger
- 1 kiwi
- 1 cup Orange Peach Mango Aqua Kefir by GT's Kombucha
- 2 ml medicinal mushrooms (Rainbo Mushrooms)
- 1 tsp Vital Proteins collagen powder (optional)
Topping
- ¼ cup coconut chunks
Instructions
- Start by washing your produce and cutting it into chunks so it all fits in your blender. Blend on high just until everything gets blended. Pour into bowls and top with fresh coconut chunks or dried coconut flakes.
