Matcha is having a big moment right now, and I’m here for it! Introducing the Healthy Vanilla Matcha Frappe with Chia Seeds, a drink I’ve focused on making unique, healthy, and sustainable.
If you’re not into the bitterness of coffee, give this a try. The addition of matcha helps to mellow out the taste of coffee as you take your first sip, yet you get a hint of coffee flavor in the aftertaste. Adding creamy plant-based milk and serving this cold helps too. Have you had anything else like it before?
This vegan-friendly drink is great for a mid-day pick-me-up and it could also be a light meal in itself since it includes fibrous plant-based milk and chia seeds, as well as banana and avocado.
The best thing about this drink is that it includes up-cycled ingredients, such as barley milk. The barley milk I used was made by Take Two Foods, an alternative milk brand that makes their product from low-carbon protein made from upcycled spent grain. I also repurposed coffee leftovers in this recipe by turning coffee into ice cubes instead of pouring it down the drain. The less food waste there is in my household, the better!

Healthy Vanilla Matcha Frappe with Chia Seeds
Ingredients
- 1 cup frozen coffee cubes (I freeze leftover black coffee in silicone ice cube trays like this one that easily pops out of the cube tray)
- ½ cup vanilla plant-based milk (I used Take Two Foods' vanilla barley milk)
- ½ banana
- ¼ cup frozen avocado (most grocery stores sell frozen avocado chunks near other frozen fruit items)
- 2 tbsp chia seeds
- 1 tbsp coconut sugar
- 1 tbsp unflavored collagen peptides
- 1 tbsp unsweetened matcha powder
Equipment Needed to Make This Recipe
A blender with sharp blades and high voltage to cut through the ice. I’m obsessed with my Ninja. Here is the model I have:
(To make this with a blender that doesn’t have super sharp blades, just let the ice cubes sit out on the counter for 10 minutes so they can soften up a bit.)
