Happy National Fry Day! I thought I’d share a recipe I’ve been perfecting over the past couple weeks and am extremely proud of, my Truffle Sweet Potato Fries. These taste restaurant quality, but they don’t come with the calories that restaurants dish up. Instead, I’ve air-fried these and went light on the oil so they’re guilt-free.
Since I’m adding an Italian flair to all recipes shared this month, I had to include Italian seasonings, which is what inspired me to add truffle and rosemary. Here are some fun facts about truffles, rosemary, and french fries in Italy:
- Truffles are so precious in Italy, that truffle farmers guard their properties during the height of the season with armed security. In fact, there have been extreme truffle heists in Italy in recent years. In 2014, two truffle bandits broke through the security gates of a facility belonging to Urbani Tartufi and stole up to €60,000 worth of truffles. That’s equal to about $68,500 USD!
- Truffles are grown primarily in the countryside of northern Italy in the Piedmont region, but they can also be found a little more south, throughout Tuscany.
- Italians call fried potatoes “patatine fritte” and roasted potatoes are called “patatine arrosto.”
- Patatine fritte may be found on the menu in Italian restaurants under the “contorno” section, which consists of side vegetable dishes.
- The Latin translation of Rosemary (ros-marinis) means “mist of the sea” or “dew of the sea.”
- Rosemary is native to the sea cliffs of Italy, as well as Spain, France, and Greece.

Restaurant quality truffle sweet potato fries
Ingredients
Fry ingredients
- 2 sweet potatoes, peeled and chopped into long strips
- 1 tbsp rosemary, fresh chopped
- truffle olive oil spray
- 2 tbsp corn starch
- ¼ tsp truffle powder
Condiments
- 3 tbsp roasted garlic aioli
- black truffle salt
- 3 tbsp black truffle ketchup
- cracked pepper
- ½ tsp rosemary, finely chopped
Instructions
- Once you peel and cut the sweet potatoes into french fry-shaped strips, let them sit in a bowl of water for 20 minutes to an hour. This step is crucial, as it will help remove starch from the potatoes so they will be crispier in the end.
- Coat your fries with truffle olive oil and rosemary. Add to the air fryer for 12 minutes on 400 degrees. After 12 minutes, pull out the fries from your air fryer and shake the pan to move things around. Put back into your air fryer for another 12 minutes on 400 degrees.
- While the fries are cooking, prepare your condiments. I like to have one small dish with garlic roasted aioli and rosemary, and one small dish with ketchup.
- Once they're done cooking, apply salt immediately, then dig in!
