Earlier this year, my friends and I flew from Baltimore, Maryland to Portland, Oregon, where we then had to take a 3-hour drive through Mt. Hood to get to Bend for a ski trip. After landing at PDX and before hitting the road for the next leg of our trip, we knew one thing for certain—we needed to fuel up with some good food first.
About 20 minutes from the PDX airport in the “Overlook” community of Portland is a funky Mediterranean restaurant that has the vibe of a craft brewery, called Spitz. We picked this spot because it had good reviews on Yelp and there was plenty of street parking available out front of the restaurant. Turns out, Spitz is a micro chain restaurant that has locations in LA, Minneapolis, and Utah too!
Here’s what the place looks like from the curb and once you walk into the door:

Once we talked in, we each ordered a beer and different items from their menu for lunch. The food was fresh, filling, and packed with flavor—exactly what I was seeking after eating bananas and energy bars on the plane.

Making the Remix Bowl at Home
I might be biased, but I think the Remix Bowl was the best thing on the menu. Unfortunately, Spitz doesn’t have a location on the East Coast, so I have no choice but to re-create the Remix Bowl at home whenever I have a craving for it.
Since there are many ingredients included in this recipe, I’ve incorporated some shortcuts to make it quicker to prepare.
Here are some time-saving tips
1. Get harissa sauce that comes already prepared in a jar.
- Harissa sauce is not sold in most grocery stores, but Mina is a brand that’s available at Whole Foods stores or online through Whole Foods Market on Amazon. I like their Mild flavor, but if you’re daring you could go for the spicy sauce!
- Alternatively, here is a recipe to make harissa sauce in 45 minutes.
2. Get some Za’atar seasoning
- Za’atar seasoning has been quickly gaining popularity over the last year. I initially became introduced to it through a Blue Apron recipe, and have since noticed high-end restaurants incorporating it into their dishes too.
- Here is a recipe to make the spice blend yourself using dried oregano, sumac, marjoram thyme, sesame seeds, and sea salt, however, I prefer to just buy the seasoning ready to go.
3. Stock up on these Trader Joe’s essentials
tzatziki Mediterranean herb feta cheese zhoug sauce
- You should be able to find tzatziki sauce at just about any grocery store where refrigerated dressings are available. Alternatively, here is a recipe to make it.
- If you can’t get your hands on TJ’s Mediterranean herb feta cheese, plain feta cheese is fine to use too.
- Here is a recipe to make zhoug sauce from scratch. If you want something less spicy, then you could substitute it with chimichurri sauce.
4. Get out your air-fryer! (Or if you don’t have one, get one!)
- I have the Philips air fryer, however, it looks like the COSORI is currently the top seller on Amazon.
- I used an air fryer to make crunchy garbanzo beans for this recipe in 17 minutes, as opposed to baking them for 30 minutes.
5. Use pre-fire-roasted veggies
- I like the little charred bits on my corn and peppers, and I think the canned or frozen fire-roasted corn and peppers taste great.

Za’atar & Zhoug Remix Bowl
Ingredients
For the Quinoa
- 2 cups cooked tri-color quinoa (cook it in vegetable broth instead of water for extra flavor)
- ½ cup Trader Joe's zhoug sauce
- 2 tbsp lemon juice
- 2 tbsp tzatziki sauce
For the crispy garbanzo
- 1 can garbanzo beans
- 1 tbsp za'atar seasoning
- 1 tbsp olive oil
For the bowl toppings
- 1 English Cucumber, diced into small cubes
- 2 Roma tomatoes, diced into cubes
- ½ cup Fire-roasted peppers
- 1 cup Fire-roasted corn (If you're using frozen corn, run it under hot water to de-thaw and pat dry before sprinkling with oil, salt, and pepper. Pop it into the air fryer for 10 minutes at 400 degrees so it becomes a little crispy. Sprinkle with 1 tbsp of za'atar seasoning, plus ground pepper and sea salt.)
- 1 cup Shredded cabbage
- ½ cup Trader Joe's Mediterranean herb feta cheese
- ½ cup diced red onion
- 4 tbsp Tzatziki sauce
- 4 tbsp Harissa sauce
Instructions
- Prepare all the bowl ingredients and set aside. (You could combine everything into one giant bowl and mix up all the ingredients if you want to cut back on the number of dishes used, otherwise if you're entertaining, keep everything in separate dishes so each person can scoop however much of each ingredient they'd like to their bowl.)
- Assemble the ingredients on top of the quinoa, and sprinkle a few shakes of za'atar seasoning over everything before digging in. Enjoy!
